Ham hocks are a great compliment to beans, soups and stews. I smoked some for split pea soup last year and man is it good. If you like to make baked beans then you can't go wrong with the meat from a hock or two in there as well. Once you start using them the ideas will really start to flow. It's excellent, flavourful meat.

Ham hocks are most often taken from the front section of the leg of the pig, in the general area of the ankle.

Not sure if you are are referring to ham hocks or pork hocks, ham hocks are already smoked and can be eaten as is. They make a great addition to soups or baked beans and need no further cooking or smoking. Pork hocks on the other hand can be smoked, cured, or what ever you would do with pork. Fresh pork hocks contain a lot of connective tissue and the meat can be tough requiring a long, slow and low cooking.good luck!
