UK Style Tandoori Chicken

Hi All

Not been on for a few months, but summer is nealry upon us in England so time to dust off the barbie!

I love indian food and especially the Tandoori dishes, this is my own creation thats a balance between being easy to prepare and tastes very authentic.

I'm posting this in the poultry section but I have tandoorried (is that even a word!) loads of cuts from chops to ribs to steaks!

You only need 2 ingredients to prepare the marinade:

1. Greek style yogurt (or any live yogurt)
2. Tandoori Paste, I use Pataks (pic below:

Mix the yogurt (more the better around 1 pint is good) and tandoori paste together, then dump in whatver meat you have and leave for a min of 4 hours. Overnight is ok. Cook it on the smoker until the meat is cooked to your liking, not too hot or it will go black.

I chop some fresh coriander to go on just before eating maybe with a nice indian style coriander relish (I'll post my recipe in the vegge section).

Yummy hot or cold.

Sounds nice! I will be doing some tandoori chicken kebabs this summer too.

Have you thought about making your own 'paste'.

pom, we also use Pataks quite often here at home. One of our favourite recipes is to marinade chicken thighs in Biriyani (done the same, with paste and yogurt) and smoked on the wsm. Unbelievable flavour!

How much tandoori paste to the pint of yogurt? I'd like to try that. Love Asian food, smoked curry sounds great to me.

doogster, the directions will be on the bottle, but I think we used about 2 big TBSP biriyani paste to ~2 cups yogurt for a basic chicken thigh marinade. It depends on how strong you want it I suppose.

That stuff is nothing short of disgusting..

Do a simple google search for tandoori marinade and you will find a host of excellent recipes that will taste so much better than that stuff.

I work in an indian fusion resto and I will tell you that stuff really lacks authentic flavour.

I will do you a solid.. Here is my tandoori recipe that I have adapted from what I learned from the resto..

6 oz Yogurt
4 oz Oil
2 oz Vinegar
4 tsp Garam Masala
3 tsp Cayenne pepper or 1.5 tsp. traditional Indian chili powder
4 tsp Salt
3 tsp Garlic puree
3 tsp Ginger puree
3 tsp Ground coriander
5 tsp Tandoori BBQ Masala
4 tsp Paprika

You can find tandoori masala in just about any Food basic's or no frills...

This is a blend not an actual spice. Do you buy it pre-made wet/dry or make it yourself ?

It is a pre made blend. You can find it in most grocery stores or your favorite Indian grocer.

easier to buy the pataks with it already in b3

I also find Indian dishes in different countries are a LOT different, an authentic English curry is nothing like a genuine dish from Bangladesh for example.

If you can get access to internet tv, try and find Gordon Ramsey india trip that was out the last few weeks, really interesting. They tandoori a whole goat and I must say it looks good.

I made this tonight, I used 2 quartered (2 1/2 pound) birds that had been marinating since yesterday afternoon. I cut the cayenne to 1 tsp as I was preparing it for my dad who doesn't like heat. Personally, I'd go for 2 tsps next time, but, as it was, it gave only a tiny tingle of heat.

I used half a 750g container of Astro Balkan style plain yogurt and added the other ingredients to combine. I then poured it over the quartered birds to marinate overnight.

I prefer homemade to premade, as well - makes a HUGE difference in the outcome. That, and one has control over what one is eating, as well ;)
