Sauce Experiments - Help!

Hey All

Not been here for a while, well it is winter here in the UK and guess who forgot to stock up on charcoal!

Anyway I have been experimenting trying to make some awesome bbq sauce. I'm not succeeding though :(

Firstly let me say I HATE ketchup, the very smell of it makes me retch so its out of the question - off the table! I have been using nice fresh passata as the base, and then adding varying amounts of the ingredients below and bring to the simmer:

passata
brown sugar
vinegar (tried malt, white malt, cider and white wine)
garlic powder
Sweet paprika
onion powder
sale / pepper seasoning.



Now this stuff looks great but it just doesn't taste like the manufactured stuff. Any help on making some real nice sweet, sticky and tangy bbq sauce that doesn't involve Heinz ketchup would be appreciated as its costing me a small fortune in experimenting!

I think what you are missing is Molasses. That is the flavour I think you are thinking of.
