My trip down to take Myron's Cooking Class :)

Postby Smokin' Frenchmann » Fri Mar 05, 2010 3:37 pm

Hi everyone,

I'm hoping this is the right part of the forum to put this on, if not please move.

I'm Jay and live in Whitby, just a regular backyard BBQ guy for now, was using a Bradley Original smoker, watched BBQ pitmasters, fell in love and it's all downhill from there! lol

First thing I decided to do was take Myron's class, I thought it would be well worth the $$$ so I signed up last December and went down to Unadilla, GA last weekend.

It was INCREDIBLE!!!!

Started off with a meet and greet on the Friday night with a fish fry (it was catfish) with some fried chicken for those who don't like fish. Got to meet a few people, talk to Myron and some of the others on his crew.

Saturday morning we started at 9am and it was pretty much prep day. We did whole hog first and put it on the smoker because it's on there for 24 hours. Then we did shoulders, boston butts, brisket, ribs and chicken.

He gives you all the recipe's for the injections, glazes, sauces etc. and shows you exactly how to prep everything, how to cook it and how to build a blind box for judging. This is 95% geared towards KCBS and MBN competitions but even being a back yard guy I did not feel out of place.

They provided lunch on Saturday and for dinner was a low country boil, which is shrimp, potato, corn on the cob and smoked sausage all boiled together, it was great!

Sunday was a BUSY day started at 7am and all day was cooking, taking meat off the grill, saucing, wrapping and a heck of a lot of EATING!! lol

We finished about 4pm on Sunday where we got a diploma :)

All in all, Myron is awesome, completely different then the guy they portray him as on BBQ Pitmasters, his family is amazing, his friends and crew were all great.

I even ended up buying one of his cookers, so I'm driving down next week to pick it up! lol

And I also decided to join the Canadian BBQ Championships this summer, can't wait!!!

Great story. I'm envious. So what was Myron like? Was every other word a swear word?

Hi Jay,

I'm signed up for his class in June, along with a couple friends. Reading this sure isn't going to make the 3 month wait any easier!!

So, no way to ship those cookers back up to Canada? What did you do for accommodations? Can you recommend a decent hotel?

Thanks, and congratulations!! Be sure to keep us all up-to-date with your competition experiences!

In another forum I read, a Big Green Egg forum, someone just came back from his cooking class. I wonder if you were in the same class. She posted lots of pics. ---> Link

TheSmokingDude - I would stay in Perry, GA the Microtel was ok but there's nothing else at that exit, staying at the Holiday Inn or anywhere else at Exit 136 would be better. There's got to be a way to ship it, but he said it would cost a couple hundred JUST to crate the thing for shipment, then pay for shipping, brokerage, duty, taxes etc. I rather take the hit and drive down :)

Jasper - Yup, that was the same class :)

You don't say where you're from, or where the cooker is built. If it's made in the US and you're in Ontario you'll only have to pay the GST and PST, unless that's changed. Due to NAFTA things imported from the US to Canada that are originally made in Canada or the US are duty free. Avoiding the brokerage fee is the big thing. I bought a Silentaire Scorpion 1 airbrush compressor a few years ago, it's made in Texas, I would have paid the tax on something like the equivalent of 170 CDN. UPS brokered it across the border, cost me 90 bucks to receive it. The brokerage fee is generally whatever they paid plus 2X that, so 3 times the actual cost.
When it comes to beatin's, baby you deserve the best.

Awesome trip, great pictures,

What a leg up to start your competition series. I wish I had gone to something like that before I started. Heck it's still something I'd like to do!

What a way to get inspired to the sport, (I can call it a sport... we compete don't we ???)

I'll be keeping my eye on you in Toronto...

Cheers
