*LOL* Bang on, Roxy, on the meat. Myron wins a lot...but at Memphis in May, the world championship, their meat supplier is Sams Club, and a lot of teams coming in for that (238 teams last year) just get their meat when they get to Memphis. That's for the world pork barbecue cooking championship!!!!! And they win. Myron has not won Memphis since I have been there... (though he did come 4th in whole hog last year, but again, did not make finals). And you are right about Myron getting called -- my imprecise bad!!!

Also, they just in the last episode, maybe in one before that, showed how people use other people's rubs. Someone early on, I think, talked about not reinventing the wheel; that there were so many champhionship rubs on the market now, that using those worked for so-and-so, and I think that showed up in the Big Pig Jig as well (Myron's rub). All this plays to some other threads in this site about amateur vs. pro; whether to cook to the judge's tastes or not, and it all seems to just boil down to making the best product you can, something you are very happy with, and putting it out there to see how it does. That seems to be where the fun is. And all those folks on Pitmasters are having more fun than the show makes out, trust me.....but I think you already know that from personal experience!

I noticed something else in that show, again about Myron....they made him out to be a bit of an overconfident ass, but when you watch the non-interview clips (like when they are waiting for results), he seems a good guy....loves the winners, congratulates them, is happ for them, etc. You have to look for it, but it's there, and that's kinda sad, too.

There seems to be one more episode, focussing on Johnny Trigg. I wonder how their ratings were.....I would like them to do something similar this coming season. It looks like they never started shooting until mid-September and then just hammered the next 8 weeks, till The Big Pig Jig in early November.

I have been following the story regarding the "Wagyu Beef", is it really worth it. The only advantage as far as I am aware is the it has that it has enough marbling and tenderness to stand up to a high heat cook and still come out tender. The whole purpose of BBQ is low and slow, if not your grillin... Is it worth the $$$ not in my opinion, Myron get's beat by regular brisket all the time...

Hi Everybody,

Roxy wasn't the brisket Myron got from Tuffy a Wagyu Brisket?

I am sure many many people have won not using Wagyu, but trust me it would help..........alot
but of course you still need to know how to cook it!
I have seen many people destroy high end products all the time with cooking procedures at which point it doesnt matter much what your cooking with.(I work with culinary students all day, lol)
Clearly I am no expert in the BBQ circuit, but I do know a little about food and I am just saying Wagyu if anyone has ever experienced it, is pretty special stuff, and as with all cooking, it starts with good ingredients.

The Wagyu brisket that Tuffy gave to Myron to use is from Snake river farms. http://www.snakeriverfarms.com/wagyu a lot of US competitors I know use their products successfully.

As a KCBS CBJ I have had a LOT of not very good chicken.
There was nothing wrong with PAUL trying the tin, IT'S A TECHNIQUE not a secret or that fool Myron wouldn't have been flapping his jaw he would have been selling it on his website HAHAHA. The muffin tin is what everyones going to use now so there will be all these round balls of chicken boiling & soaking in juice instead of the lollipop turds we've been getting at turn-ins in California.

There are a lot of ways to do chicken... try to find a balance and you could get up there in the results.

The worst chicken has skin you can't bite through maybe overcooked/ undercooked or too much sauce or too spicy HOT.
For you cooks PRACTICE alot and take your a game to the competition.

Your comment drives me to the notebook....marking one more thing to pay closer attention to when judging!! *G* so lemme ask you another question on the chicken front; most people use thighs, and most for the same reasonable-sounding reasons. But...should cookers/competitors be working on other parts of the chicken to "turn in to win"? Wings? Drumsticks? White meat -- can it be successfully BBQ'd and retain enough qualities to win?

My opinion on this is:

This is a lot like the pot calling the kettle black, because Myron does it too!

If you watch the episodes, Myron admits to "recently adopting the Apple juice spritz" for ribs and forsaking his butter/honey technique. He obviously didn't invent the apple juice spritz; its a technique that has been adopted by quite a lot of BBQ teams, including Myron.

So why is it ok for him to adopt a technique used by others, but if someone uses his technique, then its shigging?

Besides, the whole technique of using something (like muffin tins) to create a uniform shaped & sized food item has been used by cooks for ages! Examples: McDonald's uses rings to shape the eggs for breakfast sandwich. Or... Bakers use muffin tins to create uniform shaped & sized muffins!


So, here's the question in my mind: Did Myron really create a new technique or did he borrow an already well established technique to suit his needs?

Remember imitation is the sincerest form of flatery!

Looking back on a year of this (and WOW.....I was amazed to see this resurface!!!) I would say muffin tins are muffin tins and there is no proprietary hold on that, or spritzing or anything else. Also, I think all that was really well-packaged hype in the show. In the year since, I have encountered Myron 3-4 times at comps and there is no personality trait as performed on last season's pitmaster show. Even on this year's show he is different, more like normal.....

.....so good on 'em for doing what they had to do to produce drama within their show!! And so, did whoever it was shig from DivaQ last week? Or was that just damn good theatre? Ah, television. Ah, reality..............

agree, there are some nuggets to be found in the show but you got to look for them. I record the program on the computer and watch it again for the tips that can be found.

look at ep 3 tuffy is using usda prime but epsode 6 Tuffy is using wagyu (3:45) tuffy changed over the week before. Myron noted that Tuffy game him a wagoo.


I watched these dozons of time to get the rare nuggets, yup... they are there...
