I will see if I can find out who that was! I like your response about stuffing - it makes some sense, flavour-wise, and you have a good approach. What I do not see is hogs on spits in competition. I only see belly-up or belly-down, and lots of arguments for both. One team with a double spit (amazing contraption) 2 years ago had both hogs fall off...fall apart.

Im half done a huge lang clone so no more spinning for me either...the rack system I use holds it together real well though...was that team you are reffering to from Belgium I saw a double spit cooker in Memphis two years ago thats where they were from.

Yeah, it was the Belgians. Disaster. They were trying to sell the contraption (it looked good, but.....) for a few thousand so they would not have to transport it back across the Atlantic. I have no idea what ever happened to it. Have not seen it, or them, since, in Memphis..........

I have some pictures of that pit I should post them ....I was there for the week just eating and drinking up a storm...met alot of nice people down there..had a blast hung out with Crosstown Cookers they are a hoot.
I hung with the Parrothead Porkers of Hogaritaville a wee bit.....nice folks, major beer consumers. Found out they were also staying in my motel the year they went to New Hampshire to judge........More beer, good people. I thought I had a pic of the Belgian cooker, but have not found it yet.
