Howdy Folks, Mike here. I'm a long time outdoor cooker and semi-new to Smoking. Had a Gourmet ECB and could not control temps (low and slow were a no show). My gator tail, coon and possum were coming off a little too chewey. Discovered the Weber WSM a couple of months ago. That thing has been a game changer! Great Q!
