BBQ CLASSES

Postby darinevans19 » Wed Dec 07, 2011 9:12 pm

I am wondering if there was a chance to get some one to host BBQ Class what would you pay for attending that course? and who would you like to see do the course? and what would you like to see covered in that course.

Or some of us are just intermittent visitors (although it looks like I missed this thread last time I was on)!

I'd totally be game, although I can see how getting enough people in one physical area could be tough. It's a tough question to answer as it's pretty broad. How far you'd travel and what you'd be willing to pay would be very different depending on who and what and where.

Just as a (hopefully not-inflammatory) example - I *personally* don't agree with Gary Wiviott's entire approach to cooking. I know there's people who swear by his book as a bible of BBQ - and would trek through foot-deep snow drifts to hear him talk - and I'm sure he turns out amazing food - but I couldn't even get through the sample chapter of "Low and Slow" without wishing I had the physical book so I could throw it. It's not that he's *wrong* it's just an approach that couldn't be more alien to my own. On the other hand Craig "Meathead" Goldwyn, while (as far as I know) having never competed in a competition Is someone *I'd* walk through snowdrifts just to hear give a talk about the places he's travelled and the people he's met on the way. The problem is that everyone's mileage is going to vary on that front so the question is really "what would a good 'common denominator' class be (or even *is* there one that would garner enough interest).

Something like getting one of the many great teams (local or US-based) who've had real successes willing do do master-classes on a specific meat? Or some revelation they've had? Or even on non-competition meats? That could be something I'd be all over given the right person and topic (and probably mostly what people think about when they hear "classes") but what about someone who had success (or even better not) starting a restaurant? What about a food critic, or travelogue writer, or book author? All of those could be interesting given the right combination.

One last point I don't know if the association has looked at is that there also might be a real opportunity to reach out to the broader non CSBBQA community through some type of more general classes geared to the non-competition public. I'm sure the market for people who might be willing to take an "improve your backyard ribs" class is a lot larger than "interested in competition BBQ". You wouldn't want to make it a major focus - but it's at least a possible outreach to the broader community (and I know at least here in Toronto public-geared cooking classes are all the rage right now). And let's be frank, there isn't a member of this board who doesn't have the knowledge to run a competent "how to improve your backyard ribs" class.

You may be on to something, for the populated areas of Ontario, the CSBBQA could co-op with HD, Lowes or Ontario Gas BBQ.You could have a Saturday Backyard BBQ class on site. It would be a win-win situation for everyone. For those of us that live on the fringe of civilization as we know it, we would be SOL. However, we will never know unless someone tries.

More spitballing - Another area that might have some crossover appeal would be to focus on regional BBQ from a specific region of the US - especially non-Ketchup based ones. Up here we don't see nearly the variety of styles you can get in the US (I keep thinking I'd love to try a SC style mustard-based sauce, or NC vinegar/pepper sauce... but it's daunting when you've never *seen* one... ).

AWESOME guys like jules said keep ideas flowing we need all the info and ideas we can get from YOU in order to try and figure out what we want and who we want bring in and yes all are correct as PRICE & LOCATION plays a huge part in this.

My theory on this is and this is my 2 cents on this there are a lot of teams out there that charge 2-500 for a course in the states I know i am willing to travel to those events and take part keep in mind if your going to the states for that course your looking at then,
350 course, travel to and from maybe 200 gas, 100 hotel, 50 for food = total of 700 roughly

that\s $700.00 possibly not saying its actual cost that you just guesstimate spent to take a course great so if we wanted to do and event with some one this could save you the money as well with all the extras or we can try and figure and work something out as well to help with a package deal.

I like the idea of a backyard class as well like expatbill said gear it towards everybody not a lot ppl want spend 2-500 on a course as yep money is not there or very expensive but the idea of a open class works very well and maybe a better route to take for all of us.

who would you like to see possibly host the class?

and again what would you be willing to spend if your to attend a class?

GTA sounds like it would be a better location for a lot of people.

keep the ideas flowing. b3

There are some more cost efficent BBQ classes that you can take in Ontario vs the high cost classes the pros in the US offer.
I have been to Danille(DivaQ's) classes and they were great classes I hada ton of fun and left so full of great que I didn't go near pork for a week.
I have taken pulled pork, brisket, ribs and yardbird classes but missed her "everything bacon" class. They were about $75 each and I also was intrested in Buster Rhynos in Whitby does rib classes quite often and they are about $85 I think.

I would recomend DivaQ's classes to anybody who can make their way to Barrie. I have drove to all of her classes from London so I would say that even include gas and the cost of her class is a bargin compared to the $500 range.
